Jackfruit Carnitas Tacos! Delicioso!!

As some of you might know... I don't cook! I enjoy cooking but I'm more of a "front of the house" lady, if you know what I mean! My hubs is the talented chef, so when it comes to cooking, I'm totally spoiled! He cooks, I clean… it's really a match made in Heaven!

A few weeks ago my brother Mike had his birthday party & bought a HUGE, fresh, ripe Jackfruit to add to his fruit salad & make Jackfruit juice. What’s a Jackfruit you ask? Our thoughts exactly, but when we investigated more about this strange fruit we were pleasantly surprised! Little did we know there were so many more uses for our newly found fruit! Once the party was over we googled our way into the Jackfruit world looking for different ways to use such a versatile fruit.

What we found was a web full of very creative and delicious recipes. One such recipe was Jackfruit Carnitas Tacos found on Urban House Wife's blog & her site then led me to Chow Vegan's blog! Keep in mind, I’m not even a Vegan but I do consider myself a Pescaterian, my hubs on the other hand is a proud Carnivore. That being said, it’s always a pleasure to make my husband a “Carnivore” free meal & have him really enjoy it! Success!!

Since Carnitas & Chili Verde are traditionally made with pork then needless to say it’s been well over 10 years since I’ve enjoyed either dish. You can imagine my excitement when we stumbled upon the Jackfruit & its creative & delicious uses! Since I did make a double batch, the only thing I would change would be the amount of lime I added. The recipie called for half lime per can of Jackfruit, I added 1 whole lime for 2 cans. The dish turned out a bit acidic but it was still muy delicioso!!

So far, we’ve only tried the carnitas tacos but I did see another recipie for BBQ Pulled Jackfruit Sandwich. Can’t wait to give it a go!!
